Bicarbonate of Soda
Buttermilk or milk mixed with 1 tbsp of vinegar
Preheat a heavy based frying pan or skillet on a low to medium heat.
You can make your own buttermilk substitute by adding a couple of tablespoons of vinegar or lemon juice to milk and giving it a stir. It’s ready to use straight away.
Sprinkle some flour into the base of the pan. Lift the farls carefully into the pan as they’re a bit delicate. Cook for 5-10 minutes on each side or until they’re golden brown.
Place the flour, salt, bicarbonate of soda in a mixing bowl. Make a well in the centre and add the buttermilk.
Form the dough into a flattened circle approximately the depth of your finger. Cut into quarters
Work the mixture into a dough, take it out of the bowl and knead it lightly on a well floured surface so that it forms a stiff dough.
